Peach Cobbler Cookies
Irresistible Peach Cobbler Cookie Bites
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup diced fresh peaches
- 1/2 cup old-fashioned oats
- 1/2 cup chopped pecans or walnuts (optional)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Directions:
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.
- Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
- Fold in the diced peaches, oats, and chopped nuts (if using) until evenly distributed throughout the dough.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the cookies are lightly golden around the edges.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
