Lemon Drops

Ingredients:

125g unsalted butter, softened

1/2 cup caster sugar

1 egg

1 tsp finely grated lemon rind

1 cup self-raising flour

1/4 cup custard powder

1/3 cup lemon curd (or jam of choice)

Instructions:

Preheat oven to 180°C (350°F) and line a baking tray with baking paper.

In a bowl, cream butter and sugar until light and fluffy.

Add egg and lemon rind, and beat until combined.

Sift in flour and custard powder. Mix until a soft dough forms.

Roll teaspoons of dough into balls and place on tray. Flatten slightly and make an indent in the centre of each.

Spoon a little lemon curd into each indent.

Bake for 12–15 minutes or until lightly golden.

Cool on tray for 5 minutes before transferring to a wire rack
